BIO: Chef Nate Appleman attended the Culinary Institute of America before he began his internship at Cincinnati’s Maisonette under Chef Jean Robert de Cavel. By 1999 he was working at Brasa in Seattle and started growing a passion for butchery and curing. For the next six months, he lived in Florence, Italy sampling the rustic, local dishes and learning the art of salumi and gaining a deep appreciation for the region’s cuisine and ingredients.

Upon Nate’s return to the States, he began overseeing the meat station at Campton Place under Laurent Manrique. Soon, renovations closed Campton Place so Nate Appleman was moved to Sylvan Portay at the Dining Room Ritz-Carlton before moving to Napa Valley to attend pastry school. In 2003 he was named Executive Sous Chef at a San Francisco restaurant called A16.

He eventually was named Chef de Cuisine and part-owner of A16 and earned certification by the Verace Pizza Napoletana Association—one of the few certified pizzaiolos in the U.S.

Nate Appleman then made a surprise move to the Mexican chain, Chipotle and can be seen working the line at the Manhattan test kitchen in Chelsea. Nate Appleman made an appearance on Chopped All-Stars on the Food Network, was named Rising Star Chef from the James Beard Association and is available for speaking engagements, cooking demonstrations and hosting.

BIO: Growing up with a Dominican father and an Italian mother, meals were a serious affair. Angelo Sosa graduated from the Culinary Institute of America after he ran the kitchen at the Escoffier Room.

Teaming with Christian Bertrand at the Four-Diamond, Stonehenge Restaurant & Inn, Angelo served as Christian’s sous chef at the opening of Acqua. In 1999, Christian Bertrand referred Angelo Sosa to Jean-Georges Vongerichten, who eventually became his mentor.

Angelo spent two and a half years with Jean-Georges, then left to take an executive sous chef position at TanDa. After being at TanDa for only a year, he left to go back to work for Jean-Georges Vongerichten at the Ocean Club at Dune in the Bahamas. Next, Angelo went to New York to be the executive sous chef at Restaurant Jean Georges for two years and then was asked to open Jean-George’s trend setting Spice Market as executive sous chef.

In 2005, he became the executive chef of Yumcha in the West Village, and showcased his take on modern Chinese cuisine which gained huge acclaim. Later that year, Angelo Sosa began consulting and helped launch restaurants including, restaurant Stephen Starr’s Buddakan, Asian-Mediterranean hot-spot LOFT, Morimoto, Alain Ducasse’s Spoon Food & Wine in Paris and others. He opened his first restaurant, Xie Xie in the Hell’s Kitchen neighborhood of New York City and won a StarChef’s New York’s Rising Star award for Best New Restaurant Concept.

Angelo’s appearances include being a casts member on season 7 of Bravo’s Top Chef and was invited to compete on Top Chef All Stars. His more recent project, Social Eatz, features a menu that includes NYC staples with a mix of flavors from across Asia; Angelo is also the executive chef.
