BIO: Celebrity Chef Kevin Gillespie is a food enthusiastic in every sense of the word. He is passionate about serving his customers quality food each and every day, and is committed to using fresh, organic, sustainable ingredients in all of his dishes. He had quickly risen through the culinary ranks to become the executive chef and partner of Woodfire Grill in Atlanta, GA.

Kevin Gillespie, an Atlanta native, started his culinary education at the Art Institute of Atlanta. Here, he balanced a full course load with part-time duties at various restaurants. Upon graduating with honors, Gillespie held positions including chef de partie at Atlanta Grill at The Ritz-Carlton, sous chef at TWO Urban Licks and chef de cusine at Woodfire Grill. In 2006, Gillespie left Atlanta and headed to Portland, OR to work as executive sous chef at Fife Restaurant. However, after a year and a half, Gillespie missed the South too much and came back to work at Woodfire Grill.

In summer 2008, Nicolas Quinones and Bernard Moussa of Five Senes Restaurants, LLC purchased Woodfire Grill and made Kevin Gillespie the new executive chef. In early 2009, Gillespie joined the two men as a partner of the restaurant. Also, in 2009, Gillespie was chosen to participate on Bravo’s sixth season of Top Chef. On the show, Gillespie was voted as the “fan favorite,” made his mark by winning several “Quickfire” and “Elimination Challenges” and finished as one of the seasons top three finalists.

Gillespie is a rising star in the culinary world and has been named on of Mother Nature Network’s top (40 Chefs Under 40.” In his free time, he enjoys camping, playing music and barbecuing. BIO: Chef Bernard Guillas joined the La Jolla Beach & Tennis Club as executive chef in 1994 and knew it was the place or him; coastal lifestyle was right up his alley coming from Brittany, France. Using the local flavors and his classical training, Bernard is responsible for operations at La Jolla Beach & Tennis Club, the Shores Restaurants at the La Jolla Shores Hotel, and the Marine Room restaurant. His position entails Bernard to oversee all menus, wine selections and special events.

Rewinding back to his formal training, he began at le Bretagne Restaurant in Questembert, France where he worked alongside Georges Paineau. Expanding his training with several Maitres Cuisinier de France fine dining restaurants, he moved on to become chef de cuisine at Le Dolmen in French Guyana. He attributes this move with influencing him with the rich diverse South American flavors that he incorporates into his food today.

Under Pierre Chambrin, the former White House executive chef, Bernard Guillas moved to Washington DC to work as chef tournant, chef chef saucier, and sous chef at Maison Blanche. In 1989, he relocated to San Diego and spent five years as chef de cuisine at the Grant Grill, in the US Grant Hotel in downtown San Diego. Bernard was inducted into the International Restaurant & Hospitality Rating Bureau’s American Chefs’ Hall of Fame in 2001 and is one of only fourteen chefs to receive this honor. He has appeared on Food Arts Magazine, the Rising Star Chef cookbook and PBS’ Rising Chef television series and has been a guest on Martha Stewart Living Radio show and KPBS.

He has been guest chef at the prominent James Beard House in New York, was selected as San Diego’s Best Chef numerous times, named the Gold Medallion Awards recipient, Chef Magazine, San Diego Home/Garden Lifestyles Magazine Readers Poll and San Diego Magazine People’s and Critic’s Choice. Bernard Guillas is available for cooking demonstrations, hosting and speaking engagements.

BIO: Organic foodie and chef, Ani Phyo uses local, organic, seasonal, fresh produce, nuts and seeds to create unique recopies. As author of three cookbooks she was named one of 12 ‘Warriors” in Sambazon Acai’s “Warrior Up” advertising campaign, which celebrates the work of leading social and environmental activists.

Growing up surrounded by natural and organic foods, it was only natural for Ani Phyo to co-found SmartMonkey Foods. SmartMonkey Foods was a catering company hosting gourmet raw food dinner which clients ranging from Nike, Adidas and Carnival Cruise Lines. In 2009 SmartMonkey Foods ceased operations. Ani’s other projects include web and multimedia work with her company, SmartMonkey Media. She has created websites and user-centered interaction design for the Web. Ani Phyo created a 14,000 page rich-media educational site for Simon and Schuster in 1996.

Ani Phyo is passionate about working with Pedal Patch Community, where she teaches at risk youth on ways to garden and make food in urban areas. She has been seen featured on billboards around California wearing a warrior headdress. Ani wants to spread the word to all children on how to connect themselves to the earth and would an addition to your conference.
