BIO: Graduate of Central Michigan University, Brian Recor’s lifelong interest in the culinary arts stemmed from his childhood interest in his mother’s cooking and baking. Eventually, after leaving his original career path as a computer software consultant, he decided to attend the Institute of Culinary Education in New York City and graduated with honors in 2001.

Brian Recor worked as a line cook at the Waters Edge three star NYC restaurant, which specialized in French American cuisine. He packed up his things and went back home to Michigan and began working at Rattlesnake Club in 2001. Rattlesnake’s award winning chef, columnist and author, Jimmy Schmidt is famous for his artistic use of fresh and seasonal ingredients mixed with local meats and produce.

In 2002 Brian Recor moved to Palm Springs, California and helped open The Rattlesnake at Spotlight 29 Casino as the sous chef. The restaurant in time relocated to Palm Desert, California and Brian took over as Chef de Cuisine. The next restaurant was Morgan’s In The Desert in La Quinta Resort. Brian Recor has been inaugurated into the Institute of Education Alumni Hall of Achievement and has done charity work for City Harvest NYC and Wolfgang Pucks American Wine and Food Festival benefiting Meals on Wheels. BIO: Bradford Thompson spent many summers while growing up on the coast of Maine lobster trapping and picking fresh blueberries with his grandmother. After graduating from University of Rochester, he realized his passion for food was much greater than originally thought, so he began training under Chef Vincent Guerithault, Alessandro Strata and Daniel Boulud throughout the Michelin Starred kitchens of France. These experiences led to Bradford cooking for one of the finest restaurants in the country, Mary Elaine’s at the Phoenician in Scottsdale, Arizona and while here, he used his strong American culinary skills with his class French training.

Mary Elaine’s won some of the most coveted awards during Bradford Thompson’s time, such as the prestigious Five-Diamond by the American Automobile Association, The Mobile 5 star award, and the esteemed Grand Award from Wine Spectator magazine. Bradford has been named one of Food and Wine Magazine’s Best New Chefs of 2004 and is the winner of the James Beard Award: Best Chef Southwest in 2006. This same year, he was inducted into the Scottsdale Culinary Hall of Fame for his giving to the community and culinary world.

In 2007, Bradford Thompson left Mary Elaine’s and came out with a line of bottled Jamaican jerk sauces. He has been a consultatnt for restaurateurs in New York and Bradford and his cuisine have been featured on the Food Network, NBC, Today Show, CBS Early Show, Wine Spectator, Food Arts, Gourmet, Bon Appetit, and Food and Wine. BIO: Chef Bernard Guillas joined the La Jolla Beach & Tennis Club as executive chef in 1994 and knew it was the place or him; coastal lifestyle was right up his alley coming from Brittany, France. Using the local flavors and his classical training, Bernard is responsible for operations at La Jolla Beach & Tennis Club, the Shores Restaurants at the La Jolla Shores Hotel, and the Marine Room restaurant. His position entails Bernard to oversee all menus, wine selections and special events.

Rewinding back to his formal training, he began at le Bretagne Restaurant in Questembert, France where he worked alongside Georges Paineau. Expanding his training with several Maitres Cuisinier de France fine dining restaurants, he moved on to become chef de cuisine at Le Dolmen in French Guyana. He attributes this move with influencing him with the rich diverse South American flavors that he incorporates into his food today.

Under Pierre Chambrin, the former White House executive chef, Bernard Guillas moved to Washington DC to work as chef tournant, chef chef saucier, and sous chef at Maison Blanche. In 1989, he relocated to San Diego and spent five years as chef de cuisine at the Grant Grill, in the US Grant Hotel in downtown San Diego. Bernard was inducted into the International Restaurant & Hospitality Rating Bureau’s American Chefs’ Hall of Fame in 2001 and is one of only fourteen chefs to receive this honor. He has appeared on Food Arts Magazine, the Rising Star Chef cookbook and PBS’ Rising Chef television series and has been a guest on Martha Stewart Living Radio show and KPBS.

He has been guest chef at the prominent James Beard House in New York, was selected as San Diego’s Best Chef numerous times, named the Gold Medallion Awards recipient, Chef Magazine, San Diego Home/Garden Lifestyles Magazine Readers Poll and San Diego Magazine People’s and Critic’s Choice. Bernard Guillas is available for cooking demonstrations, hosting and speaking engagements.

BIO: Executive chef at Oceana Restaurant, Ben Pollinger, is known for his unique cooking style—blending the freshest seafood with best possible ingredients. He is passionate about buying local and has seasonal ingredients and has received critical acclaim when Oceana was awarded three stars in The New York Times, and again in October when Oceana was awarded its Michelin star for the second year in a row. Ben Pollinger has spent much time overseas, working in, and dining in some of the most prominent restaurants.

Each dish that Ben creates shows his passion and love of the sea and the land. His philosophy is to be a good steward of our planet and lives out his beliefs in everything he does. At his house in New Jersey, he has a 500 square foot organic garden which he uses to supply his vegetables and herbs for the global seafood cuisine at Oceana.

While studying at Boston University, he cooked part-time and discovered his passion for cooking. Ben then attended the Culinary Institute of America after working in several local restaurants and graduated class valedictorian. Upon graduation he left for Monte-Carlo to work for a year at Le Louis XV under Chef Alain Ducasse. While here, he learned the local culture and traveled the countries of France, Italy, and Spain, learning to love and respect the flavors of each culture.

Ben Pollinger returned to New York and began work under Christian Delouvrier at Les Celebrites and Lespinasse. For the next eight years, he worked under Michael Romano at Union Square Café and Floyd Cardoz at Tabla. While at Tabla, he was taught about Indian flavors which helped to expand his global range of flavors, texture and combining colorful ingredients. Ben donates much of his time to charitable organizations and serves on the Curriculum Advisory Committee at the French Culinary Institute. Anne Burrell

Anne Burrell is well known not only for her amazing dishes, but also for her trademark spiky blond hair. She has worked at some of New York’s finest restaurants, studied the culinary traditions of Italy, and has been Mario Batali’s sous chef on Food Network’s Iron Chef America. Her TV show, Secrets of a Restaurant Chef reveals easy to master technique and dishes for the at home cook. Anne Burrell also co-hosts Worst Cooks in America and leads a team of inexperienced home cooks around the country taking them through culinary boot camp.

One of the first restaurants Anne worked in was when she arrived back in New York City from her travels in Italy at Felidia Restaurant, working with Lidia Bastianich. Then, she served as a chef at Savoy where she cooked over an open wood fire, creating colorful menus, after being inspired by the Mediterranean.  Where at Savoy, she developed her culinary style—a love of rustic food made with simple and pure ingredients but with intense flavors.

Her next move was to the Institute of Culinary Education, but not to be a student. Anne Burrell took the opportunity to take a passion; teaching, and teach students her culinary knowledge. After three years of teaching, she went back to the restaurant business, serving as the executive chef at Lumi Restaurant. After Lumi, she joined the Batali-Bastianich empire by accepting a job at Italian Wine Merchants. This entailed salumi production and traveling to off-site events with Mario Batali. Mario was then asked to be one of Food Network’s Iron Chefs, and enlisted Anne as his sous chef. Through 2007-2008, Anne Burrell served as executive chef at hot spot Centro Vinoteca, where she made a menu of small plates, antipasti, pastas and main courses all presented with her trademark bold, pure, rustic flavors. She is available for cooking demonstrations, hosting and corporate appearances.
