BIO: Executive chef at Oceana Restaurant, Ben Pollinger, is known for his unique cooking style—blending the freshest seafood with best possible ingredients. He is passionate about buying local and has seasonal ingredients and has received critical acclaim when Oceana was awarded three stars in The New York Times, and again in October when Oceana was awarded its Michelin star for the second year in a row. Ben Pollinger has spent much time overseas, working in, and dining in some of the most prominent restaurants.

Each dish that Ben creates shows his passion and love of the sea and the land. His philosophy is to be a good steward of our planet and lives out his beliefs in everything he does. At his house in New Jersey, he has a 500 square foot organic garden which he uses to supply his vegetables and herbs for the global seafood cuisine at Oceana.

While studying at Boston University, he cooked part-time and discovered his passion for cooking. Ben then attended the Culinary Institute of America after working in several local restaurants and graduated class valedictorian. Upon graduation he left for Monte-Carlo to work for a year at Le Louis XV under Chef Alain Ducasse. While here, he learned the local culture and traveled the countries of France, Italy, and Spain, learning to love and respect the flavors of each culture.

Ben Pollinger returned to New York and began work under Christian Delouvrier at Les Celebrites and Lespinasse. For the next eight years, he worked under Michael Romano at Union Square Café and Floyd Cardoz at Tabla. While at Tabla, he was taught about Indian flavors which helped to expand his global range of flavors, texture and combining colorful ingredients. Ben donates much of his time to charitable organizations and serves on the Curriculum Advisory Committee at the French Culinary Institute. BIO: Chef and owner of CulinAriane in Montclair, NJ, Ariane Duarte was first inspired to cook as a young child after cooking with her grandmothers. BIO: Growing up with a Dominican father and an Italian mother, meals were a serious affair. Angelo Sosa graduated from the Culinary Institute of America after he ran the kitchen at the Escoffier Room.

Teaming with Christian Bertrand at the Four-Diamond, Stonehenge Restaurant & Inn, Angelo served as Christian’s sous chef at the opening of Acqua. In 1999, Christian Bertrand referred Angelo Sosa to Jean-Georges Vongerichten, who eventually became his mentor.

Angelo spent two and a half years with Jean-Georges, then left to take an executive sous chef position at TanDa. After being at TanDa for only a year, he left to go back to work for Jean-Georges Vongerichten at the Ocean Club at Dune in the Bahamas. Next, Angelo went to New York to be the executive sous chef at Restaurant Jean Georges for two years and then was asked to open Jean-George’s trend setting Spice Market as executive sous chef.

In 2005, he became the executive chef of Yumcha in the West Village, and showcased his take on modern Chinese cuisine which gained huge acclaim. Later that year, Angelo Sosa began consulting and helped launch restaurants including, restaurant Stephen Starr’s Buddakan, Asian-Mediterranean hot-spot LOFT, Morimoto, Alain Ducasse’s Spoon Food & Wine in Paris and others. He opened his first restaurant, Xie Xie in the Hell’s Kitchen neighborhood of New York City and won a StarChef’s New York’s Rising Star award for Best New Restaurant Concept.

Angelo’s appearances include being a casts member on season 7 of Bravo’s Top Chef and was invited to compete on Top Chef All Stars. His more recent project, Social Eatz, features a menu that includes NYC staples with a mix of flavors from across Asia; Angelo is also the executive chef. He is available for hosting, cooking demonstrations, and endorsements.

BIO: Aki Kamozawa and Alexander Talbot are the owners of Ideas in Food, LLC, a consulting business out of Levittown, PA. They began working together in 1997, at Clio in Boston and have been working together ever since. Together, they share techniques, creativity for food and innovative approaches to food. Their business grew out of their blog, Ideas in Food, and now they have grown to help restaurants, food service companies, and home kitchens use creative ways and unique approaches to create food. Ideas in Food website began in 2004 as a digital notebook to record their work in restaurant kitchens. Aki Kamozawa and Alexander Talbot have been invited to some of the most respected conferences for chefs including the Experimental Cuisine Collective and the International Association of Culinary Professionals. Together they appeared as guest chefs for three Holland America cruises, where they lead demonstrations and taught classes to the passengers.

They also write for Popular Science online, and write a column titled Kitchen Alchemy, highlighting scientific explorations in the kitchen. Aki and Alex have been published in Sante Magazine, contributed to an essay in Food and Philosophy and have appeared in New York Time, LA Times, Food and Wine Magazine, Saveur, Sante Magazine, and Gourmet online. Aki Kamozawa and Alexander Talbot have appeared on The Food Detectives on the Food Network and have been on Food Talk radio station, WOR, in New York.
