Biography:

Massachusetts born and bred Chef Matthew Gaudet continues to further the culinary arts with his creative French bistro dishes with a New England twist. Chef and Restaurateur, Matthew puts his skills on display at his restaurant West Bridge, in Cambridge, Massachusetts. West Bridge’s industrial interior design can be attributed to its location in Cambridge’s old Boston Woven Hose Factory, and the restaurant was recently named one of Bon Apetit Magazine’s Top 50 New Restaurants.  Chef Matthew’s other accolades include being recognized by Food & Wine Magazine as a member of the Best New Chef list in 2013. Aside from his restaurant, he makes appearances at events such as the Boston Seafood Show, the largest seafood expo in North America.

Chef Matthew learned and worked under multiple reputable chefs and restaurants including Chef Kerry Heffernan of Danny Meyer’s Union Square Hospitality Group, and one of the world’s most famous chefs, Chef Jean George Vongerichten of the renowned Jean Georges restaurants. He also spent an extended amount of time helping create the well-known French inspired cuisine served at New York’s Eleven Madison Park restaurant, before returning to Boston to work at Brasserie JO.

The Monterrey Bay Aquarium Seafood Watch program is a program that helps both consumers and businesses choose to use and eat better fish choices. The program also employs scientists to research sustainable seafood sources and create a report to convince businesses and consumers to buy seafood products that are fished or farmed in environmentally non-harmful ways.  Chef Matthew makes it a priority to provide his customers with seafood that is sustainably sourced and environmentally safe, and uses the services of the Seafood Watch program to stock his restaurant.
