BIO: At age 14, Fabio began working at II Pallaio, a casual Trattoria in Firenze, Italy with stellar, Italian comfort food and a 120 seat cover. With 700-800 guests coming through the doors each night, Fabio Viviani thrived under the high pressure environment and eventually became the sous chef at age 16.

Fabio Viviani has trained in Italian and Mediterranean cuisine at IPSSAR Saffi, where he worked with Simone Mugnaini, Alessandro Panzani and Saverio Carmagini. He also managed and owned several restaurants and nightclubs in Italy, and became a young, well-respected business man in Italy.

He moved to Ventura County, California at 27 and currently works as the owner and executive chef of Café Firenze, a prominent Italian restaurant in Ventura County and Osteria Firenze, a popular Los Angeles Italian restaurant. Away from the restaurants, he is an endorser of Italian mineral water producer San Pellegrino, Bialetti Cookwear, Bertolli Olive Oil, and Santa Margarita Winery.

Fabio Viviani has two cookbooks including the Café Firenze Cookbook and and an e-book Did I Really Make Breakfast—which made it onto Amazon’s bestseller list within weeks of its release. He is best known for appearing on Bravo’s reality series Top Chef where he earned a place among the final four contestants and was named Fan Favorite. In 2010, Fabio Viviani appeared on Bravo’s Top Chef All Stars. He is available for cooking demonstrations, corporate appearances, and hosting.

BIO: Eric Skokan was born and raised in Virginia and studied history at the University of Virginia. While working at the award-winning Silver Thatch Inn, Eric quickly realized that he preferred cookbooks to textbook and after graduation; he traveled the world cooking in some of the best restaurants, until 2005 when he opened Black Cat Farm Table Bistro in Boulder.

As the saying goes, farm to table bistro—is true. There is no supply truck making deliveries of frozen foods, Eric Skokan grows his own food on his own farm, which supplies most of what he cooks at Black Cat. Free-range chickens, ducks, quail, hogs and organic produce, and a farm stand at the Boulder County Farmer’s Market.

Eric attributes all that he learned about sustainable, organic cooking from Nora Pouillon of Restaurant Nora in Washington, DC. When he moved to Bolder, Co he opened an organic ice cream place, Hatton Creamery, before opening Black Cat in 2007. BIO: Celebrity Chef Eli Kirshtein, a native of Atlanta, Gerogia, is one of the prominent, young chefs in the Atlanta culinary scene. Known for his appearance on Bravo’s hit TV show Top Chef, Kirshtein started his career in cooking at age 16, working under Chefs Kevin Rathbun and Richard Blais. Chef Kirshtein attended the prestigious Culinary Institute in Hyde Park, New York. While studying his craft, Kirshtein worked in high-profile kitchens including Le Bernardin, Alain Ducasse, Restaurant Daniel and Jean Georges. Throughout all of his studies and experiences, Chef Kirshtein has developed a philosophy of using the best ingredients and his own cooking technique. His favorite thing to cook is “anything with good friends and some heart put into it.”

Upon graduating from the Culinary Institute in Hyde Park, NY, Chef Eli Kirshtein returned to Atlanta to once again work with Richard Blais. This time, Kirshtein worked as Blais’ Sous Chef at One Midtown Kitchen. After two years, Chef Kirshtein left to work under Alberto Cabrera at Miami’s Karu & Y as Executive Sous Chef.
