Fifteen-Minute Veggie Stir-Fry

This fast stir-fry is Jamie’s take on healthy, nutrient-rich meals with no flavor victims in sight. Colorful veggies roasted in spicy sauce-wonderful for the weeknight rush.

Ingredients

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 courgette, julienned
  • 200g tenderstem broccoli
  • 1 red chili, finely chopped
  • 2 cloves garlic, minced
  • 1 thumb-sized piece of ginger, grated
  • Soy sauce
  • Sesame oil
  • Fresh coriander to garnish

Instructions

  • Heat a wok over hot heat and add a drizzle of sesame oil.
  • Stir fry the garlic, ginger, and chili for 30 seconds before adding the vegetables.
  • Toss the vegetables quickly, cooking for 3-4 minutes, so that they are crunchy.
  • Just before serving add a splash of soy sauce and a sprig of fresh coriander.

This colorful and nutty vegetable stir-fry is an extremely versatile quick meal. Add your favorite veggies or tofu and chicken to increase the protein level.
