BIO: Eric Skokan was born and raised in Virginia and studied history at the University of Virginia. While working at the award-winning Silver Thatch Inn, Eric quickly realized that he preferred cookbooks to textbook and after graduation; he traveled the world cooking in some of the best restaurants, until 2005 when he opened Black Cat Farm Table Bistro in Boulder.
As the saying goes, farm to table bistro—is true. There is no supply truck making deliveries of frozen foods, Eric Skokan grows his own food on his own farm, which supplies most of what he cooks at Black Cat. Free-range chickens, ducks, quail, hogs and organic produce, and a farm stand at the Boulder County Farmer’s Market.
Eric attributes all that he learned about sustainable, organic cooking from Nora Pouillon of Restaurant Nora in Washington, DC. When he moved to Bolder, Co he opened an organic ice cream place, Hatton Creamery, before opening Black Cat in 2007.
