BIO: Pastry Chef Shannon Swindle is a very unlikely pastry chef, he is type 1 diabetes. But, out of this he discovered a talent: creating desserts that are focused on using the natural sweetness of high quality seasonal ingredients.
With no formal training, he volunteered at professional kitchens and his love for pastry emerged as he worked under the guidance of Austin mentor chef, Lisa and Emmett Fox. He also has been inspired by Alice Waters. Currently, he is the pastry chef at Craft.
