Abdellah Aguenaou is the executive chef at Washington’s The Renaissance Mayflower hotel. As a little boy, he worked with his father in a family restaurant in his native city of Rabat, Morocco. He would do the shopping at the local farms and grew to appreciate the wonders of fresh and local ingredients.
As an engineering student, Abdellah Aguenaou would work at Parisian restaurants at night where he picked up the rudiments of classic French cooking and where his love of cooking began. He eventually moved to New York and learned English and worked in restaurant kitchens where he dreamed of becoming a chef. After saving up enough money, Abdellah Aguenaou enrolled in the Culinary Institute of America, where he earned two degrees and graduated with high honors and honors. On the side, he worked for free in New York restaurants learning everything and anything.
Abdellah Aguenaou ended up in Washington, working for the Marriot Wardman Park hotel as assistant banquet chef. After years in Washington, he moved to Mayflower where he observes all aspects of the hotel’s kitchens, and has control over recipe development.
