David Chang

David Chang is one of the premier young American Chefs taking on the international food market.  Chang has become a household name in the food industry over the last decade and his outspoken personality has given him much publicity.  It came as somewhat of a surprise to David himself because cooking became his fallback after graduating college without a definite plan.  Ultimately Chang decided to attend culinary school, which eventually paved the way for a career in the kitchen.

Chef Speaker David is best known for his incredibly successful Momofuku Restaurant group.  The first establishment of his esteemed group was founded in 2004 under the name Momofuku Noodle Bar.  It was located in the East Village of Manhattan and offered ramen based noodle cuisine.  The restaurant became a huge success in the city, prompting Chang to open up a Momofuke Ssäm in 2006 and Momofuku Ko in 2008.  Both restaurants earned overwhelmingly positive critiques.  Momofuku Ssäm has been ranked in the World’s 50 Best Restaurants from 2009-2012.  Momofuku Ko eventually would move into the old Noodle Bar location, and Noodle Bar relocated a few blocks down the street.  The restaurant conglomerate now has over 12 separate locations and recently expanded into foreign markets in Australia and Canada.

Beyond his restaurant chain Chang has produced two cookbooks; Momofuku Cookbook and Momofuku Milk Bar Cookbook.  He’s also spearheaded the creation of Lucky Peach, a quarterly food journal with a differentiating topic in each edition.   David has made multiple appearances on food-centric television programs, and co-launched a PBS program with Anthony Bourdain called The Mind of a Chef.  In 2014 for Shake Shack’s 10th Year Anniversary Chang created a specialty shrimp burger, which subsequently caused the longest line at the Madison Square Garden Park Shake Shack in history.  Changs’s restaurants have been the recipients of many awards, and Chang himself has won 4 James Beard Awards.

Martin Yan

Celebrity Chef Speaker, Martin Yan, is a renowned Chinese-born Hong Kong-American chef and food writer.  The current host of the award winning cooking show, Yan Can Cook, began his career at the young age of twelve, cooking at his uncle’s Chinese restaurant in Hong Kong, where he learned many of the traditional methods of Chinese barbecue he still uses today. During this time, he earned his diploma from the Institute of Cookery of Hong Kong, before leaving Hong Kong to continue studying in Canada, then in California at the University of California, Davis, where he received a Master of Science in food science.  Yan then began teaching Chinese cooking, his area of expertise.  He began appearing on Canadian talk shows doing cooking demonstrations and then went on to get his own PBS cooking show Yan Can Cook, which is broadcasted in over 50 countries, and has seen much success.  Since 1978, he has hosted over 1,500 episodes of the show and counting. Currently, Yan also hosts Martin Yan – Quick & Easy, a program from the Food Network Canada, as well as Martin Yan’s Chinatown Cooking, where he tours Chinatowns around the globe.  The talented chef has also made several appearances as a guest judge on popular culinary competition shows, Iron Chef America, Top Chef, and Hell’s Kitchen.  In addition to his television programs, Celebrity Chef Martin Yan has his own chain of Yan Can Restaurants and established his own cooking school in the San Francisco Bay Area called the Yan Can International Cooking School.  He is also the author of over two-dozen cookbooks and has earned the accolade of Master Chef by the American Culinary Federation.  Yan’s talents in the kitchen have garnered many prestigious awards including a Daytime Emmy Award for best cooking show, James Beard Award for best TV Food Journalism, James Beard Award for Best TV Cooking Show, and the Antonin Careme Award by the Chef’s Association of the Pacific Coast.

Eddie Huang

Chef and restaurateur Eddie Huang is the co-owner of BaoHaus, a Taiwanese bun shop and restaurant located in East Village New York. Eddie is redefining foodie culture with his brash and hip new approach to food and his recent memoir published in 2013 titled Fresh off  the Boat details his assimilation into American culture as an Asian-American.

Eddie grew up watching his mother cook and his father ran and owned a successful line of steak and seafood restaurants which instilled the knowledge to one day open his own successful venture in New York. While still working his way to the top, Eddie appeared on a Food Network show called Ultimate Recipe Showdown which was then hosted by culinary legend Guy Fieri. Although Huang came up just short in winning the show, he was able to learn valuable lessons about his self and the business throughout the process and gained a new fan in Fieri. The success on the show inspired Eddie to open his own restaurant in 2009, and within a few years, the restaurant that had started with less than 5 menu items had grown into a full menu heralded eatery.

The ex-lawyer and comedian turned restaurateur gained more notoriety when he began hosting a Cooking Channel show called Cheap Bites in 2011 and also appeared on several episodes of the network’s series Unique Eats. After his success on the Cooking Channel, Eddie began working with Vice Media on his own segment called Fresh off the Boat, an online Vice series about a family growing up and searching for the “American Dream” in Chinese Orlando. The series has now been picked up by ABC and has already completed its first 2 seasons. He has written articles for the New York Times as well appeared as a TED Talk Speaker. He loves the American hip-hop culture and self identifies with it along with his own native culture. Eddie has also been working on a snack series which is set to premiere on MTV in 2014.

Shirley Chung

37-year-old Shirley Chung attained a notable amount of fame in the kitchen following her third-place finish on the eleventh season of Bravo’s Top Chef: New Orleans, just barely losing to Nina Compton and Nicholas Elmi. Shirley impressed Padma Lakshmi and her fellow judges with her cuisine without borders, drawing from Chinese, Mexican, Italian, and French traditions.

Before making a splash in the culinary world, Shirley received a business degree from the University of California and worked in Silicon Valley for four years before deciding to refocus on food. Shirley hit the books and the kitchen at the California Culinary Academy, earning a Culinary Art degree.

Shirley started out staging at The French Laundry before taking a position at Thomas Keller’s Bouchon. After moving to Nevada, Shirley opened a Las Vegas location for Thomas Keller’s chain. The Las Vegas culinary scene provided many opportunities to Shirley, who served at Guy Savoy’s self-named French eatery, Mario Batali’s B&B Ristorante, and Jose Andre’s China Poblano. While working at China Poblano, Shirley developed a passion for Mexican cuisine and rediscovered the culinary traditions of her homeland.

When she’s not in the kitchen, Shirley is an avid traveler, always looking for new cultural cuisines to add to her repertoire. In the summer of 2014, Shirley received an offer to take part in the latest celebrity cruise line, Top Chef at Sea. Shirley sets sail with fellow cheftestants Tiffany Derry, Casey Thompson, and Hosea Rosenberg aboard the Celebrity Reflection, headed for the Eastern Caribbean on the 15th of November.

Paul Qui

31-year-old Filipino, Paul Qui, achieved culinary stardom after winning the ninth season of Bravo’s Top Chef in 2011. Throughout the course of the show, Paul out-cooked fellow cheftestants, Chris Crary, Beverly Kim, and Sara Grueneberg. Paul has been passionate about cooking his entire life, first making his interest known by attending the Texas Culinary Academy in Austin.

Paul left the academy to train under renowned chef Tyson Cole at Uchi, where he worked his way from a simple stage to chef de cuisine in a rather short period. The two have formed a rather strong bond over the years, as Paul currently serves as executive chef at Cole’s other Austin eatery, Uchiko.

While at Uchiko, Paul partnered with fellow Uchi chef, Moto Utsunomiya, to open a line of food trucks called Eastside King. As executive chef, Paul designed a unique Asian menu for their Austin eatery on wheels, catering to late-night patrons and those looking for a hot lunch. After enlisting three food trucks, Paul and Moto decided to open their first brick and mortar Eastside King, offering hungry customers a fixed location to order their delectable Asian cuisine.

Never one to pass on a major opportunity, Paul became a cheftestant on the ninth season of Top Chef: Texas. Paul’s unique blend of French and Japanese cuisine dazzled judges, winning him the competition. In the culinary world, Paul is no stranger to this level of recognition. In 2012, James Beard gave Paul the award for the “Best Chef, Southwest,” and StarChefs.com gave him the Rising Star Award, too.

As a rather decorated chef, Paul tries to incorporate different flavors he’s experienced into his life. Despite his passion for French and Japanese cuisine, Paul also attempts to incorporate Southeast Asian influences into his delicacies, drawing on memories from his homeland, the Philippines. In the summer of 2014, Paul was invited aboard the Top Chef at Sea celebrity cruise, aboard the Celebrity Solstice, set to sail on the 15th of August.
