BIO: Organic foodie and chef, Ani Phyo uses local, organic, seasonal, fresh produce, nuts and seeds to create unique recopies. As author of three cookbooks she was named one of 12 ‘Warriors” in Sambazon Acai’s “Warrior Up” advertising campaign, which celebrates the work of leading social and environmental activists.

Growing up surrounded by natural and organic foods, it was only natural for Ani Phyo to co-found SmartMonkey Foods. SmartMonkey Foods was a catering company hosting gourmet raw food dinner which clients ranging from Nike, Adidas and Carnival Cruise Lines. In 2009 SmartMonkey Foods ceased operations. Ani’s other projects include web and multimedia work with her company, SmartMonkey Media. She has created websites and user-centered interaction design for the Web. Ani Phyo created a 14,000 page rich-media educational site for Simon and Schuster in 1996.

Ani Phyo is passionate about working with Pedal Patch Community, where she teaches at risk youth on ways to garden and make food in urban areas. She has been seen featured on billboards around California wearing a warrior headdress. Ani wants to spread the word to all children on how to connect themselves to the earth and would an addition to your conference. BIO: Amanda Cook is originally from Washington DC and graduated with honors from L’Academie de Cuisine, and since has worked for some of the most highly respected chefs in the DC area. Amanda Cook’s career took off with working at Galileo for Roberto Donna, then for Michel Richard Citronelle, and finally at Cityzen for Eric Ziebold for the past 6 years.

Aki Kamozawa and Alexander Talbot have been invited to some of the most respected conferences for chefs including the Experimental Cuisine Collective and the International Association of Culinary Professionals. Together they appeared as guest chefs for three Holland America cruises, where they lead demonstrations and taught classes to the passengers.

They also write for Popular Science online, and write a column titled Kitchen Alchemy, highlighting scientific explorations in the kitchen. Aki and Alex have been published in Sante Magazine, contributed to an essay in Food and Philosophy and have appeared in New York Time, LA Times, Food and Wine Magazine, Saveur, Sante Magazine, and Gourmet online. Abdellah Aguenaou is the executive chef at Washington’s The Renaissance Mayflower hotel.  As a little boy, he worked with his father in a family restaurant in his native city of Rabat, Morocco. He would do the shopping at the local farms and grew to appreciate the wonders of fresh and local ingredients.

As an engineering student, Abdellah Aguenaou would work at Parisian restaurants at night where he picked up the rudiments of classic French cooking and where his love of cooking began. He eventually moved to New York and learned English and worked in restaurant kitchens where he dreamed of becoming a chef. After saving up enough money, Abdellah Aguenaou enrolled in the Culinary Institute of America, where he earned two degrees and graduated with high honors and honors. On the side, he worked for free in New York restaurants learning everything and anything.

Abdellah Aguenaou ended up in Washington, working for the Marriot Wardman Park hotel as assistant banquet chef. After years in Washington, he moved to Mayflower where he observes all aspects of the hotel’s kitchens, and has control over recipe development. Abdellah Aguenaou is available for hosting, cooking demonstrations and corporate hospitality.
