BIO: A graduate of Cornell University’s School of Hotel Administration, Douglas Keane began his career at The Four Seasons, a three-star restaurant in the Seagram’s Tower working under chef Christian “Hitsch” Albin. Following his time with Albin, he teamed with New York City’s Lespinasse with Chef Gray Kunz. While here Douglas was very impressed with the exotic flavor combinations and the precise technique in which the line cooks possessed. Next, Douglas Keane joined Chef Traci Des Jardins’ team in San Francisco at Jardiniere and later became chef de cuisine. After being granted  leave of absence, Douglas Keane served as opening sous chef at Gary Danko where his friendship with his future partner, Nick Peyton started. Douglas returned to Jardiniere as executive chef and in 2002, he was honored as the Rising Star Chef by the San Francisco Chronicle and earned three and a half stars for his cuisine.

Partnering with Nick Peyton, they opened Cyrus, a luxury restaurant opening in Sonoma County in 2005. Cyrus is Nick and Douglas’ “dream restaurant” specializing in ambitious cooking style that Douglas Keane refers to as “contemporary luxury.” The ingredients used in Cyrus are uncommon and are used to create exciting new tastes for guests.

Cyrus and Chef Douglas have been the recipient of an abundant amount of accolades which include two stars from The Michelin Guide, four stars from Michael Bauer at the San Francisco Chronicle, Gourmet magazine’s Top 50 Restaurants in America, Esquire magazine’s Chef of the Year and Food & Wine magazine’s Best New Chef. BIO:  The only two Michelin stars in Brooklyn were awarded to Chef Cesar Ramirez and his restaurant, Chef’s Table at Brooklyn Fare Kitchen. Located in downtown Brooklyn is far from Cesar’s culinary path of Manhattan where he was once the Chef de Cuisine at Bouley.

Chef’s Table is not your normal restaurant; Brooklyn Fare Kitchen was just remodeled to accommodate 18 guests instead of 12 and is part of a grocery store in Brooklyn. Cesar Ramirez has kept the concept simple, you eat in the kitchen—Cesar’s work space and only gets the very best ingredients.  Jean-Luc Naret was quoted in GrubStreet New York as naming Ramirez’s Table as one of the best three meals he has had in the world this year.

Cesar didn’t start in New York, he made his was from Mexico and began his restaurant experience in Chicago where he worked at Tru. BIO:  Cathy Whims is on a quest to offer historically-based, authentic dishes with a sense of place and a passion for local produce. Cathy’s partner, David West and her opened Nostrana in 2005 and it quickly became awarded Best Restaurant of the Year. Nostrana features Italian menus in Southeast Portland and serves classic Italian dishes with seasonal dishes reflecting the personal relationship Cathy Whims has with the local farmers.

BIO: After graduating from the University of Rhode Island, Bruce Moffett worked for 6 years in Washington, DC for US Senator John Chafee along with numerous trade organizations.

In Charlotte, North Carolina, Bruce opened a Pizza restaurant without realizing the difficulty of owning a restaurant. Eventually, Bruce sold the restaurant and enrolled in the Culinary Institute of America where in 1993, he graduated with honors.

Four years later, Bruce Moffett moved to Boston, MA and began work at L’Espalier for two years and then moved to one of Boston’s most famous restaurants, Metropolis Café and ultimately became executive chef. In the neighborhood of Fox Croft East in South Park, Bruce opened Barrington’s Restaurant in 2000. The menu includes American food with a comfort twist and changes seasonally to feature the local and organic produce. Also on the menu is a brilliant wine list, chosen to perfectly match the cuisine.

Charlotte Observer named Barrington’s 4 out of the 4 stars and ZAGAT’S named it Tops for Food in Charlotte: Top Restaurants in America Guide for 8 consecutive years. BIO: Graduate of Central Michigan University, Brian Recor’s lifelong interest in the culinary arts stemmed from his childhood interest in his mother’s cooking and baking. Eventually, after leaving his original career path as a computer software consultant, he decided to attend the Institute of Culinary Education in New York City and graduated with honors in 2001.

Brian Recor worked as a line cook at the Waters Edge three star NYC restaurant, which specialized in French American cuisine. He packed up his things and went back home to Michigan and began working at Rattlesnake Club in 2001. Rattlesnake’s award winning chef, columnist and author, Jimmy Schmidt is famous for his artistic use of fresh and seasonal ingredients mixed with local meats and produce.

In 2002 Brian Recor moved to Palm Springs, California and helped open The Rattlesnake at Spotlight 29 Casino as the sous chef. The restaurant in time relocated to Palm Desert, California and Brian took over as Chef de Cuisine. The next restaurant was Morgan’s In The Desert in La Quinta Resort. Brian Recor has been inaugurated into the Institute of Education Alumni Hall of Achievement and has done charity work for City Harvest NYC and Wolfgang Pucks American Wine and Food Festival benefiting Meals on Wheels.
