BIO:  Celebrity Chef Ellis Cooley is an up and coming chef based in the tourism bureau of Cleveland’s world-class dining scene. Many tourists and locals ignore restaurants residing in hotels and in Ellis’ case, not only is it unfair–it’s unwise. A farm-to-table restaurant, Amp 150 replaced an old steakhouse in September of 2009, and after a $20 million makeover, it became a more appealing hotel restaurant. Executive Chef Ellis Cooley came from New York where he spent eight years at various restaurants before ending up at Amp 150. Ellis strives to use local foods and is commonly seen at local volunteer fund-raisers to support the local community.

Amp 150’s menu is described as contemporary American; its food is modern, original, clean and focused. The prices are moderately priced and split into sections for sharable items, small plates, entrees and sides. Because Ellis is concerned with using local products, the menu undergoes frequent tweaks with the latest produce that is in season.

Ellis is also involved in the Chef’s Garden project which is a leading grower of artisanal produce in the U.S. for the world’s top chefs. Chef’s Garden began over forty years ago at the Jones family farm in Huron, Ohio and sold products to local farmers’ markets. Chef’s Garden specializes in vegetables, micro greens, herbs and edible flowers with over 600 varieties. They continually drive to develop new products and to reintroduce heirlooms that have been lost over the generations. The main focus of Chef’s Garden is quality, freshness, taste and service, which is never compromised.

Ellis Cooley recently visited The Culinary Vegetable Institute in Milan Ohio where he served up dishes like velvet mushroom soup, charcuterie platter and slow roasted duck, all with ingredients from Chef’s Garden. Ellis also works with Dinner in the Dark, a non-profit organization he co-founded that brings together Cleveland’s top chefs every month to host a six-course dinner for guests who are “in the dark” about the evening’s menu until they arrive. To date, the dinner series has raised more than $25,000 from ticket sales for local charities, all of which are hand-selected by each month’s participating chefs.

Ellis is a big supporter of ‘going green’ and supporting any food that is local, he creates relationships with local farmers and strives to sustain those relationships and anytime he can use local produce, poultry, seafood, etc. he will.  Ellis has garnered a number of personal accolades as well, including being named a Rising Star Chef by Restaurant Hospitality magazine (2010), Best New Chef by Cleveland Scene Magazine (2010) and Champion of Sustainability by E4S, an economic development organization whose mission is to grow a sustainable regional economy (2010).

As of June 10, Ellis will be leaving Amp 150 in Cleveland and taking his talents to South Florida where he will be the food and beverage director for the West Palm Beach Marriot. BIO: Beau MacMillan is the executive chef of Sanctuary on Camelback Mountain in Arizona. His belief is that food should not be overworked, but it should be simple and fresh. He uses only the freshest, local ingredients from farmers who produce organically.

Cooking in America’s most renowned kitchens, Beau MacMillan is a graduate of Johnson and Wales University. He began his cooking career at 16 years old when he held a position at Carne Brook Tea Room in Carver, Massachusetts. He has spent time under Chef Francois de Melogue and joined the team at La Vielle Maison in Boca Raton Florida, to eventually become sous chef.

Beau MacMillan packed up his things and headed to Los Angeles and became sous chef at the Hotel Bel Air, and later Shutters on the Beach in Santa Monica. Next, he was recruited to Arizona to develop the cuisine at The Ranch on Camelback, which became Sanctuary on Camelback Mountain. In 2001, Beau and former executive chef Charles Wiley opened elements restaurant, Camelback’s signature restaurant. As the executive chef of elements, Beau MacMillan brings natural elements, national recognition and acclaim.

He has been invited to The Food Network’s kitchen stadium to compete in Iron Chef America and cooked against Bobby Flay in “Battle American Kobe Beef” and in the end, Beau beat Bobby Flay. He has cooked at The James Beard House and at Bon Appetit Magazine in New York, and has cooking classes at Sanctuary. Beau is passionate about charity work and was recently named “Culinary Chef Extraordinaire” by a local nonprofit, Scottsdale League for the Arts, for his constant charitable donations to his community. BIO:  Originally from Bristol, Chef Will Holland has always had a love for food. He started working at The Bristol Swallow hotel with Simon Hulstone, the Senior Sous Chef under Michael Kitts at age 14.  From that point forward he recalls wanting to be nothing but a chef.

Will went on to college and was introduced to Gary Jones who was the head chef at Homewood Park and was the recipient of a Michelin Star and four Rosettes. After college, Will Holland was offered a job at Homewood Park in the Michelin starred kitchen at just 18.

Will’s next job was at the Gravetye Manor then on to work with Alan Murchison at L’Ortolan. Within the first six months of L’Ortolan’s opening, Will was named head chef at only 25. The following year, it was time for Will to move onto something bigger. Alan Murchison bought a restaurant and made Will the executive chef. He makes sure that the quality and consistency of all the ingredients that enters La Becasse’s kitchen are up to par and when possible, uses local produce as long as the quality and consistency is there.

Will Holland was given a restaurant at 27 and received his first Michelin star at 29. Other restaurant allocates include 3 AA Rosettes, 2009 Best Fin Dining Restaurant, The Good Food Guide with 6 out of 10, Hardens UK Restaurant Guide and entering the top 100 restaurants in the UK at The National Restaurant Awards.  He continues to grow as a chef and he won’t stop till he reaches the top.
