As one of only twenty-three people worldwide to have received an honorary Ph.B., or Doctor of Barbecue Philosophy, grilling expert Rick Browne is a name to remember. With the degree bestowed upon him by the Kansas City Barbeque Society, Browne is well studied in the area of barbeque after spending fifteen years researching and practicing the sport across 26 countries. A total of fifteen cookbooks to his name, including bestsellers such as The Best Barbeque on Earth and The Ultimate Guide to Grilling, Browne is an articulate chef with twenty-five years of experience as a photojournalist and writer. He has covered stories in periodicals as diverse as Time, People, and Bon Appetite, and he has recently undertaken the endeavor of running his own magazine entitled Barbeque America Barbeque, which focuses on the activity of barbequing and all things related to it. BIO: Noah Carroll is the pastry chef at Café Boulud in New York. He combines his use of strong geometric shape and his personal philosophy, that desserts should be deliciously simple and seasonal. Noah is known for “pleasing with a restrained palate and clever aesthetic”.

After graduating from The Culinary Institute of America, he became a Teaching Assistant at CIA’s The Apple Pie Bakery Café with famous pastry chef, Francisco Migoya, former Executive Pastry Chef of The French Laundry. As Noah Carroll’s mentor, Francisco Migoya insisted on precision and attention to detail. These skills proved priceless as Noah produced many of the desserts photographed for Francisco Migoya’s book, Frozen Desserts.

In 2007, Noah joined the Café Boulud team as a pastry cook with the encouragement of Francisco. His skills and abilities became apparent in the kitchen and caught the eye of then Executive Pastry Chef, Raphael Haasz, who played a supportive role in Noah’s move to the formidable pastry kitchen in restaurant DANIEL. From here, he worked under Dominique Ansel, Chef Patissier and Confectionary motivation. In 2010, Noal Carroll was named Executive Pastry Chef of Café Boulud and rose to fame with his creations, such as, Butterscotch cake with layers of Chocolate Shortbread, Devil’s Food Cake and Mascarpone cream with a sticky Bourbon glaze and topped with brown sugar ice cream. BIO: Celebrity Chef Jennifer Carroll is happy to be one the rising chef’s in “her city” of Philadelphia, PA. Chef Carroll is currently the chef de cuisine of the 10 Arts Bistro & Lounge by Eric Ripert, and was also a star on Bravo’s Emmy award winning television show, Top Chef. Carroll was a finalist during the show’s sixth season and was a fan favorite throughout her time on Top Chef.

Jennifer Carroll was born and raised in Northeast Philadelphia. Growing up, she describes her father as a “steak and potatoes guy,” so her family’s meals consisted of proteins, starch and canned vegetables. This “basic” meal style inspired Carroll to expand her palate and explore the culinary world. Her passion for food and cooking led her to attend Philadelphia’s Restaurant School.

Upon graduation, Carroll found work at Derek Davis’ Sonoma and Arroyo Grill, in addition to work at Neil Stein’s Avenue B under the tutelage of Chef Patrick Feury. During her rise to culinary prominence, she spent time in San Francisco working as a sous chef at Juli and Café Kati, as well as sous chef at Eric Ripert’s prestigious Le Bernardin in New York City.

It was Carroll’s passion and desire to work in a classic European kitchen that gained her the position at LeBernardin. When 10 Arts Bistro and Lounge opened in May 2008, Eric Ripert handpicked Carroll to lead the kitchen. In the kitchen, Chef Carroll combines West Coast cuisine with international fare and classic European styles. Her wealth of experience and passion for cooking has helped her to master the usage of pristine ingredients to create unbelievable flavors.

Chef Jennifer Carroll has experience working in a three-star Michelin rated restaurant, and 10 Arts Bistro and Lounge is a AAA Four-diamond award winner. BIO:  Celebrity Chef Ellis Cooley is an up and coming chef based in the tourism bureau of Cleveland’s world-class dining scene. Many tourists and locals ignore restaurants residing in hotels and in Ellis’ case, not only is it unfair–it’s unwise. A farm-to-table restaurant, Amp 150 replaced an old steakhouse in September of 2009, and after a $20 million makeover, it became a more appealing hotel restaurant. Executive Chef Ellis Cooley came from New York where he spent eight years at various restaurants before ending up at Amp 150. Ellis strives to use local foods and is commonly seen at local volunteer fund-raisers to support the local community.

Amp 150’s menu is described as contemporary American; its food is modern, original, clean and focused. The prices are moderately priced and split into sections for sharable items, small plates, entrees and sides. Because Ellis is concerned with using local products, the menu undergoes frequent tweaks with the latest produce that is in season.

Ellis is also involved in the Chef’s Garden project which is a leading grower of artisanal produce in the U.S. for the world’s top chefs. Chef’s Garden began over forty years ago at the Jones family farm in Huron, Ohio and sold products to local farmers’ markets. Chef’s Garden specializes in vegetables, micro greens, herbs and edible flowers with over 600 varieties. They continually drive to develop new products and to reintroduce heirlooms that have been lost over the generations. The main focus of Chef’s Garden is quality, freshness, taste and service, which is never compromised.

Ellis Cooley recently visited The Culinary Vegetable Institute in Milan Ohio where he served up dishes like velvet mushroom soup, charcuterie platter and slow roasted duck, all with ingredients from Chef’s Garden. Ellis also works with Dinner in the Dark, a non-profit organization he co-founded that brings together Cleveland’s top chefs every month to host a six-course dinner for guests who are “in the dark” about the evening’s menu until they arrive. To date, the dinner series has raised more than $25,000 from ticket sales for local charities, all of which are hand-selected by each month’s participating chefs.

Ellis is a big supporter of ‘going green’ and supporting any food that is local, he creates relationships with local farmers and strives to sustain those relationships and anytime he can use local produce, poultry, seafood, etc. he will.  Ellis has garnered a number of personal accolades as well, including being named a Rising Star Chef by Restaurant Hospitality magazine (2010), Best New Chef by Cleveland Scene Magazine (2010) and Champion of Sustainability by E4S, an economic development organization whose mission is to grow a sustainable regional economy (2010).

As of June 10, Ellis will be leaving Amp 150 in Cleveland and taking his talents to South Florida where he will be the food and beverage director for the West Palm Beach Marriot.
