BIO: Eric Skokan was born and raised in Virginia and studied history at the University of Virginia. While working at the award-winning Silver Thatch Inn, Eric quickly realized that he preferred cookbooks to textbook and after graduation; he traveled the world cooking in some of the best restaurants, until 2005 when he opened Black Cat Farm Table Bistro in Boulder.

As the saying goes, farm to table bistro—is true. There is no supply truck making deliveries of frozen foods, Eric Skokan grows his own food on his own farm, which supplies most of what he cooks at Black Cat. Free-range chickens, ducks, quail, hogs and organic produce, and a farm stand at the Boulder County Farmer’s Market.

Eric attributes all that he learned about sustainable, organic cooking from Nora Pouillon of Restaurant Nora in Washington, DC. When he moved to Bolder, Co he opened an organic ice cream place, Hatton Creamery, before opening Black Cat in 2007. BIO:  Eric Jaeger received his training in Denver restaurants where he found himself working with many of the top chefs in Colorado, and spent a few years cooking as a sous chef at two of the top jazz clubs. His next move was to Telluride to work as a sous chef and then as executive chef in Crested Butte Conference Center. Eric Jaeger lives by his motto, “Food tastes good. BIO: Celebrity Chef Eli Kirshtein, a native of Atlanta, Gerogia, is one of the prominent, young chefs in the Atlanta culinary scene. Known for his appearance on Bravo’s hit TV show Top Chef, Kirshtein started his career in cooking at age 16, working under Chefs Kevin Rathbun and Richard Blais. Chef Kirshtein attended the prestigious Culinary Institute in Hyde Park, New York. While studying his craft, Kirshtein worked in high-profile kitchens including Le Bernardin, Alain Ducasse, Restaurant Daniel and Jean Georges. Throughout all of his studies and experiences, Chef Kirshtein has developed a philosophy of using the best ingredients and his own cooking technique. His favorite thing to cook is “anything with good friends and some heart put into it.”

Upon graduating from the Culinary Institute in Hyde Park, NY, Chef Eli Kirshtein returned to Atlanta to once again work with Richard Blais. This time, Kirshtein worked as Blais’ Sous Chef at One Midtown Kitchen. After two years, Chef Kirshtein left to work under Alberto Cabrera at Miami’s Karu & Y as Executive Sous Chef. More recently, in the fall of 2010, Kirshtein returned to Atlanta and is working on a new restaurant concept. He is appearing in demonstrations and workshops across the country. BIO: Georgia born, Curtis Aikens began his love of produce as a young boy picking food in the garden with his grandfather. Through high school, Curtis worked at the Conyers, Georiga A&P Market where his passion for fresh produce took off to become a career.

While vacationing in California, he was drawn to Alpha Beta grocery store in the San Francisco Bay area and began working for them after he relocated there. Before he knew it, seven years went by and he opened his first produce company called Peaches. Curtis’ next move was to New York to head Dom’s Wholesale Market and Balducci’s produce department. This position made him responsible for the United Nations Cafeteria, the Plaza Hotel and the US Open Tennis Tournament. His TV career began as a consultant and food stylist on commercials for Pizza Hut, Pillsburg and McDonalds.

Curtis Aikens returned to Georgia to start Aiken’s Family Produce, Inc., a wholesale and retail supplier of produce for clients including Rockdale County School System, the TV series In the Heat of the Night, and feature film Glory. Curtis Aikens is on the Food Network with shows Pick of the Day, From My Garden, Meals Without Meat, and Food IN a Flash.
