BIO:  The only two Michelin stars in Brooklyn were awarded to Chef Cesar Ramirez and his restaurant, Chef’s Table at Brooklyn Fare Kitchen. Located in downtown Brooklyn is far from Cesar’s culinary path of Manhattan where he was once the Chef de Cuisine at Bouley.

Chef’s Table is not your normal restaurant; Brooklyn Fare Kitchen was just remodeled to accommodate 18 guests instead of 12 and is part of a grocery store in Brooklyn. BIO: After graduating from the University of Rhode Island, Bruce Moffett worked for 6 years in Washington, DC for US Senator John Chafee along with numerous trade organizations.

In Charlotte, North Carolina, Bruce opened a Pizza restaurant without realizing the difficulty of owning a restaurant. Eventually, Bruce sold the restaurant and enrolled in the Culinary Institute of America where in 1993, he graduated with honors.

Four years later, Bruce Moffett moved to Boston, MA and began work at L’Espalier for two years and then moved to one of Boston’s most famous restaurants, Metropolis Café and ultimately became executive chef. In the neighborhood of Fox Croft East in South Park, Bruce opened Barrington’s Restaurant in 2000. The menu includes American food with a comfort twist and changes seasonally to feature the local and organic produce. Also on the menu is a brilliant wine list, chosen to perfectly match the cuisine.

Charlotte Observer named Barrington’s 4 out of the 4 stars and ZAGAT’S named it Tops for Food in Charlotte: Top Restaurants in America Guide for 8 consecutive years. BIO: Executive chef at Oceana Restaurant, Ben Pollinger, is known for his unique cooking style—blending the freshest seafood with best possible ingredients. He is passionate about buying local and has seasonal ingredients and has received critical acclaim when Oceana was awarded three stars in The New York Times, and again in October when Oceana was awarded its Michelin star for the second year in a row. Ben Pollinger has spent much time overseas, working in, and dining in some of the most prominent restaurants.

Each dish that Ben creates shows his passion and love of the sea and the land. His philosophy is to be a good steward of our planet and lives out his beliefs in everything he does. While here, he learned the local culture and traveled the countries of France, Italy, and Spain, learning to love and respect the flavors of each culture.

Ben Pollinger returned to New York and began work under Christian Delouvrier at Les Celebrites and Lespinasse. For the next eight years, he worked under Michael Romano at Union Square Café and Floyd Cardoz at Tabla. While at Tabla, he was taught about Indian flavors which helped to expand his global range of flavors, texture and combining colorful ingredients. Ben donates much of his time to charitable organizations and serves on the Curriculum Advisory Committee at the French Culinary Institute. Amanda Freitag

Celebrity Chef Speaker Amanda Freitag is a familiar Food Network personality and culinary expert based in New York. She is a regular judge on the Food Network’s popular series Chopped and co-host of American Diner Revival with Ty Pennington which aired its first successful season in May of 2015. BIO: Aki Kamozawa and Alexander Talbot are the owners of Ideas in Food, LLC, a consulting business out of Levittown, PA. They began working together in 1997, at Clio in Boston and have been working together ever since. Together, they share techniques, creativity for food and innovative approaches to food. Their business grew out of their blog, Ideas in Food, and now they have grown to help restaurants, food service companies, and home kitchens use creative ways and unique approaches to create food. Ideas in Food website began in 2004 as a digital notebook to record their work in restaurant kitchens.
