BIO: Noah Carroll is the pastry chef at Café Boulud in New York. He combines his use of strong geometric shape and his personal philosophy, that desserts should be deliciously simple and seasonal. Noah is known for “pleasing with a restrained palate and clever aesthetic”.

After graduating from The Culinary Institute of America, he became a Teaching Assistant at CIA’s The Apple Pie Bakery Café with famous pastry chef, Francisco Migoya, former Executive Pastry Chef of The French Laundry. As Noah Carroll’s mentor, Francisco Migoya insisted on precision and attention to detail. These skills proved priceless as Noah produced many of the desserts photographed for Francisco Migoya’s book, Frozen Desserts.

In 2007, Noah joined the Café Boulud team as a pastry cook with the encouragement of Francisco. His skills and abilities became apparent in the kitchen and caught the eye of then Executive Pastry Chef, Raphael Haasz, who played a supportive role in Noah’s move to the formidable pastry kitchen in restaurant DANIEL. From here, he worked under Dominique Ansel, Chef Patissier and Confectionary motivation. In 2010, Noal Carroll was named Executive Pastry Chef of Café Boulud and rose to fame with his creations, such as, Butterscotch cake with layers of Chocolate Shortbread, Devil’s Food Cake and Mascarpone cream with a sticky Bourbon glaze and topped with brown sugar ice cream. Noah hopes that one day, he will bring his talents back to the classroom to teach young chefs. He is avaliable or speaking engagements, cooking demonstrations, and team building events.

BIO: Steve Evetts is the executive pastry chef to one of New York City’s largest hotels with five restaurants and over 100,000 square feet of banquet space. Steve, along with team of 21 esteemed pastry chefs, work around the clock providing guests with the best in specialty desserts and pastries.

After leaving school at the age of 15, he went to work the very next day in culinary work and eventually completed a four year apprenticeship at a local four star hotel, Leamington Spa. During his time at Leamington Spa, he became captivated with the finer art of pastry. Steve continued his work at hotels around England, and also had the opportunity to work for the Royal Family for 3 years.

He left Great Britain for Toronto, Canada, and began work at the Four Seasons hotel. While here, he became very interested in teaching, and began working in London, Ontario where he had the opportunity to educate students and helped them enter into national and international culinary competitions. Over the next five years, he worked for a specialty dessert company in Toronto, Canada and in 2000 he received an invite from George McNeill to become the executive pastry chef at New York Marriott Marquis hotel.

Steve Evetts’ dessert recipes and photos have been published in various media outlets such as Pastry Arts and Design, his chocolate Passion Raviloi with Ricotta Souffle Fritter was featured in Giada Di Laurentiis’ Food Network program, Behind the Bash. He has won four gold medals at the VKD World Culinary Olympics. Currently Steve Evetts, is pursuing a Certification in Master of Pastry Chef through the American Culinary Federation. He was just voted one of the top ten pastry chefs in America bye Dessert Professional magazine Guest Celebrity Chef—Noah Carroll. BIO:  Lauren is an internationally known cooking and baking instructor, offering non-vocational (hands-on and demonstration) cooking and baking classes to men, women and teenagers. Classes are given in Lauren’s home-based cooking school and in various culinary facilities throughout the US. These classes also focus on cross-cultural cooking, teaching American cuisine to different nationalities and demographic groups, including male and female inmates on Rikers Island.

President and Founder of Hands-On-Food, Inc. a not-for-profit organization, devoted to helping people of different demographic groups to live a healthier, more fulfilling and more productive life. The underlying philosophy uses the wholesome art of cooking as the catalyst for positive change. One group H.O.F. has been dedicated to helping is the adolescent female inmates on Rikers Island, where 10 years ago, H.O.F built a teaching kitchen located in the high school facility within this correctional institution. For an entire decade, Lauren partnered with the Board of Education of New York and would guest teach monthly cooking classes and supply the tools and ingredients needed to enable the program, which provided two, back to back cooking classes each day, to happen. Though the building for the high school as recently changed and the program, which is now funded by the Board of Education, the program on Rikers, started by Lauren and H.O.F, is still going strong. This past February, Lauren created a new culinary/self-mastery program at The Brooklyn Residential Center, in Brooklyn, NY, a residence where female juvenile delinquents (age 13 to 18) have been remanded for 3 months to 1 year. After gathering many best-quality tools, cookware and appliances, she began teaching weekly cooking/baking classes and handed out her first certificates of completion to these students, in June 2010. In addition to creating and helping to subsidize the daily cooking program located in the prison, H.O.F. has provided preventative (educational) programs for young men and women recently released from Rikers, as well as programs for lower-income districts in and around the New York area. These programs focus on teaching parents and kid’s ways to use the kitchen as a place, and cooking as an easily accessible “at-home” activity, to foster a consistent source of physical fortification and emotional closeness within a family. She was the radio host of an hour long, “live” weekly talk-show “Food, Family & Home “Matters,” with Lauren Groveman.
