BIO: At age 14, Fabio began working at II Pallaio, a casual Trattoria in Firenze, Italy with stellar, Italian comfort food and a 120 seat cover. With 700-800 guests coming through the doors each night, Fabio Viviani thrived under the high pressure environment and eventually became the sous chef at age 16.

Fabio Viviani has trained in Italian and Mediterranean cuisine at IPSSAR Saffi, where he worked with Simone Mugnaini, Alessandro Panzani and Saverio Carmagini. He also managed and owned several restaurants and nightclubs in Italy, and became a young, well-respected business man in Italy.

He moved to Ventura County, California at 27 and currently works as the owner and executive chef of Café Firenze, a prominent Italian restaurant in Ventura County and Osteria Firenze, a popular Los Angeles Italian restaurant. Away from the restaurants, he is an endorser of Italian mineral water producer San Pellegrino, Bialetti Cookwear, Bertolli Olive Oil, and Santa Margarita Winery.

Fabio Viviani has two cookbooks including the Café Firenze Cookbook and and an e-book Did I Really Make Breakfast—which made it onto Amazon’s bestseller list within weeks of its release. He is best known for appearing on Bravo’s reality series Top Chef where he earned a place among the final four contestants and was named Fan Favorite. In 2010, Fabio Viviani appeared on Bravo’s Top Chef All Stars. He is available for cooking demonstrations, corporate appearances, and hosting.

BIO:  The only two Michelin stars in Brooklyn were awarded to Chef Cesar Ramirez and his restaurant, Chef’s Table at Brooklyn Fare Kitchen. Located in downtown Brooklyn is far from Cesar’s culinary path of Manhattan where he was once the Chef de Cuisine at Bouley.

Chef’s Table is not your normal restaurant; Brooklyn Fare Kitchen was just remodeled to accommodate 18 guests instead of 12 and is part of a grocery store in Brooklyn. BIO:  Cathy Whims is on a quest to offer historically-based, authentic dishes with a sense of place and a passion for local produce. Cathy’s partner, David West and her opened Nostrana in 2005 and it quickly became awarded Best Restaurant of the Year. BIO: Chef and owner of CulinAriane in Montclair, NJ, Ariane Duarte was first inspired to cook as a young child after cooking with her grandmothers. Ariane Duarte graduated from the Culinary Institute of America and began working at many of the best restaurants in the country before her and her husband, Michael, decided to open CulinAriane. Ariane’s husband is also the pastry chef and 18 years ago the two opened the restaurant.

Anne Burrell

Anne Burrell is well known not only for her amazing dishes, but also for her trademark spiky blond hair. She has worked at some of New York’s finest restaurants, studied the culinary traditions of Italy, and has been Mario Batali’s sous chef on Food Network’s Iron Chef America. Her TV show, Secrets of a Restaurant Chef reveals easy to master technique and dishes for the at home cook. Anne Burrell also co-hosts Worst Cooks in America and leads a team of inexperienced home cooks around the country taking them through culinary boot camp.

One of the first restaurants Anne worked in was when she arrived back in New York City from her travels in Italy at Felidia Restaurant, working with Lidia Bastianich. Then, she served as a chef at Savoy where she cooked over an open wood fire, creating colorful menus, after being inspired by the Mediterranean.  Where at Savoy, she developed her culinary style—a love of rustic food made with simple and pure ingredients but with intense flavors.

Her next move was to the Institute of Culinary Education, but not to be a student. Anne Burrell took the opportunity to take a passion; teaching, and teach students her culinary knowledge. After three years of teaching, she went back to the restaurant business, serving as the executive chef at Lumi Restaurant. After Lumi, she joined the Batali-Bastianich empire by accepting a job at Italian Wine Merchants. This entailed salumi production and traveling to off-site events with Mario Batali. Mario was then asked to be one of Food Network’s Iron Chefs, and enlisted Anne as his sous chef. Through 2007-2008, Anne Burrell served as executive chef at hot spot Centro Vinoteca, where she made a menu of small plates, antipasti, pastas and main courses all presented with her trademark bold, pure, rustic flavors. She is available for cooking demonstrations, hosting and corporate appearances.
