BIO: Holly Smith grew up loving food and studied political science at Colby College and Washington College and later the Baltimore International Culinary College. In Ireland, she completed an externship with Master Chef Peter Timmins.

After moving to Seattle in 1993, she accepted a position with Tom Douglas at the Dahila Lounge for four years. Chef Tamara Murphy encouraged Holly Smith to work at Brasa and spent a year as sous chef, leaving to open Café Juanita in 2000.

Café Juanita showcases Holly’s love of Northern Italian food and wine, a commitment to organics and sustainability mixed with a holistic approach. The Café has been awarded numerous awards both locally and nationally. BIO: Greg Carso is the executive chef at the Metropolitan Club in Chicago. Greg’s love of food comes from his Italian background and his techniques—he useses his hands to create delicious creations. Greg attened Chicago’s Washburne Trade School and then La varenne Ecole de Cuisine in Paris before working at Levy Restaurants organization, an off-premise catering company, and the Cash House restaurant. He has also worked at the Metropolitan Club and several ClubCorp clubs.

BIO: Celebrity Chef Geoffrey Blount is a certified executive pastry chef (CEPC) from Stanley, NC. Chef Blount currently works as the executive pastry chef and head instructor of the Bakery and Pastry Arts program at Central Piedmont Community College (CPCC). He graduated from CPCC in 1995 with an AAS degree in Culinary Arts and also attended the French Pastry School in Chicago. Chef Geoffrey Blount has been teaching at CPCC since 2007 and also is the owner of Sugar Buzz Pastry.

Prior to accepting a position with CPCC, Chef Geoffrey Blount’s professional career consists of work as a Pastry Chef, Executive Chef and Owner at top hotels, shops and clubs throughout the southeastern United States. He is a member of the American Culinary Federation (ACF), was named the 2009 Charlotte Chef of the Year, owned pastry shops that won the Best Pastry Shop award in 2005 and 2006, and was a Top Ten Charlotte Chef for 2004. Additionally, his dessert creations were featured at the James Beard Dinner in 2004 and 2005, an impressive distinction. It is Chef Blount’s career goal to become a certified master pastry chef, of which there are only 14 in the entire United States. BIO: Celebrity chef Gene Briggs has been a culinary mainstay in the Charlotte area for more than a decade. With over 25 years of experience, Chef Briggs has become a master of his craft. His restaurants Blue and Table are two of Charlotte’s most sought after restaurant reservations and have consistently been ranked as two of the city’s top eateries.

Chef Briggs got his start in the culinary industry in 1979, working in various restaurants located in upstate New York. Here, he honed and perfected his practice of using fresh ingredients to create a variety of dishes that sample cuisines from around the world. This philosophy of only using the freshest ingredients has defined and inspired Chef Briggs’ cooking throughout his career, something that is still evident at his restaurants today.

Following the success of Blue Restaurant & Bar, Briggs opened Table Restaurant & Bar in 2006. Table also saw immediate success and firmly planted Briggs among Charlotte’s most sought after chefs. All in all, Chef Brigg’s restaurants have won the “Best in Hot Food” category at Taste of the Nation in 2000, 2004, 2006, and 2008, have been recognized by Zagat as one of “America’s Top Restaurants” and have earned numerous Open Table awards. BIO: In 2005, Gavin Kaysen took some time away from his own kitchen to do a brief internship in the kitchen at DANIEL. Today, that choice to make a move paid off when he was named executive chef at Daniel Boulud’s Café Boulud in New York.

“Gavin has energy, talent and incredible motivation,” says Daniel Boulud. “He is very well trained and eager to embrace classic French cooking.” Gavin Kaysen has been praised by many for his eagerness to learn, passion for cooking and drive to be the best. During his tenure as chef de cuisine of El Bizchoco in San Diego, he made his first appearance as guest chef at the James Beard House, was awarded Best Chef, Critics Choice, and took first place on the US National team competition for the Bocuse d’Or in Chicago, and finally went to France to represent the US at the 2007 Bocuse d’Or.
