BIO: Celebrity Chef Jimmy Schmidt’s route to chef stardom was certainly an unconventional one. He studied electrical engineering at the University of Illinois and attended Harvard Business School for 4 years, in addition to receiving Culinary Degrees from Luberon College and the French Institute Technique du Vin diploma from Maison du Vin in Avignon. Chef Schmidt is currently the Executive Chef at Morgan’s in the desert, a new restaurant and bar at the legendary La Quinta Resort & Club.

Chef Jimmy Schmidt is seen as a pioneer in the American culinary movement towards sustainable cooking. At his restaurant, he sources the best local products that are grown and raised responsibly, he focuses on traditional cooking methods – such as open grilling, slow roasting, braising and pickling – to create deliciously simple, healthy dishes.

Beyond his work at Morgan’s, Jimmy Schmidt has also authored several cookbooks and writes a weekly column for the Detroit News/Gannett Wire Services that appears in 200 newspapers across the country. He was the founder of Chefs Collaborative and is a former board member of Share Our Strength. He participates annually in the American Chefs’ Tribute to James Beard, an event that benefits City Meals-on-Wheels in New York City and Wolfgang Puck’s American Wine & Food Festival benefiting Meals-on-Wheels in Los Angeles. BIO: “I have always felt it is critical to be a miles ahead of the latest trends, offer a diverse, inspired and scrumptious menu combined with exquisite service” – Jeffrey Nimer. Growing up, he watched his grandfather serve some of the best comfort food in Miami at his local restaurant. His father was a seasoned sommelier and well-known importer/exporter of wine. As a third generation culinarian, he spent many childhood years relishing in his mothers Lebanese dishes. With his diverse knowledge and personal connection to food is natural.

Originally trained in classical French cuisine, Jeffrey Nimer quickly started working with many talented and renowned chefs such as, Douglas Rodriguez and Mark Miltello. George Marrone and Jeffrey partnered to open the Blue Door Restaurant at the Delano Hotel on South Beach and continued to work on fresh projects, and soon joined the opening of Red Fish in Matheson Hammock Park.

After briefly being at Christy’s in Coral Gables, Jeffrey Nimer was named restaurant chef of Doc Dammers at the Omi Colonnade Hotel in Coral Gables. He was the creator of the menu for the theme restaurant and became a member of the Confrerie de la Chaine des Rotisseurs Balliage de Miami Beach. Jeffrey’s final move in Florida came as the executive chef at Baleen Restaurant at Grove Isle Hotel and Resort in Coconut Grove. While here, he received many honors including Miami Metro Magazine Critic’s Choice Award as well as other notices from Wine Spectator’s Millennium Issue.

He moved west to take a position as chef for Lavande Restaurant at the Loews Santa Monica Beach Hotel. In the same year, he was nominated for a James Beard Award for Best Hotel in 2000-2001. After his stint as a private chef, in 2005 he created Haute Chefs. Jeffrey Nimer is available for speaking engagements, hosting and cooking demonstrations.

BIO: Jeff Michaud is the executive chef and owner of Osteria Restaurant and Amis Restaurant. He began his cooking career at 13 in a pizza shop in his hometown of New Hampshire. Being inspired by his grandmother, Jeff Michaud attended the Culinary Institute of America.

After graduation, he moved to Aspen, Colorado and joined the kitchen staff at the Caribou Club, and eventually worked his way to executive sous chef. Next, he moved back to the east coast to Philadelphia and cooked with acclaimed chef Marc Vetri at Ristorante Vetri as the sous chef. Here, he discovered his passion for Italian food and decided to improve his skills by moving to Bergamo, Lombardia, Italy.

Upon arrival in Italy, he worked for a family owned butcher shop, Mangilli, in hopes of refining his meat fabrication skills, sausage, and salame making. The next two years, Jeff Michaud spent working his way through the top restaurants of Bergamo such as Michelin starred Frosio and La Lucanda, La Brugheria, Ristorante Loro, Ol Fa Pasticceria. He was named executive chef at Locanda del Biancospino, a small Inn in the foothills of the Alps. Eventually, Jeff Michaud made his way back to Philadelphia and rejoined the Vetri team. Together they opened Osteria, which has been named Best New Restaurant by Philadelphia magazine.

In 2010, with partners Marc Vetri and Jeff Benjamin, Amis Restaurant opened; a roman style Trattoria. Three months after opening Amis, it earned 3 bells from the Philadelphia Inquirer. The same year, Jeff Michaud won the James Beard Award for Best Mid-Atlantic Chef. Jeff is available for hosting, cooking demonstrations and corporate appearances.
