BIO: Celebrity Chef Lora Kirk is one of Canada’s foremost culinary authorities who has over 14 years of international culinary experience. A native of Peterborough, Ontario, Lora says she was greatly influenced by working on her grandparent’s farm, as it is here she learnt the importance of supporting local farmers and growers. This mantra is still reflected in her cooking style today, as she utilizes fresh, locally grown ingredients in her dishes.

Lora Kirk always had the dream of being a professional chef. She began her culinary career at the Algonquin College culinary program, and after graduation moved to London, England. While in London, Chef Kirk gained worlds of experience working with renowned chefs Gordon Ramsey and Angela Hartnett. Under Hartnett’s tutelage, Kirk was able to work at the famous Connaught Hotel for three years.

After her stint over seas, Chef Lora Kirk returned to Canada, accepting a position as Truffle’s Chef at the Four Season Hotel in Toronto. While at the Four Seasons, Kirk garnered tremendous media attention and was awarded the Five Diamond award for two consecutive years, four stars in Toronto Life and the OHI Top 30 Under 30 Award. Additionally, she was afforded the honor of cooking at the James Beard House and in Kitchen Stadium on Iron Chef America in New York City.

Next, Chef Kirk decided to move to New York City in attempts to further her culinary career. She took a position at Manhattan’s Allen and Delancy Restaurant as Chef de Cuisine with Neil Ferguson. She received the Top 10 New Restaurants award in the New York Times and a very prestigious Michelin Star for her talents. Chef Kirk went on to run the kitchens at the SOHO House in New York.

After traveling and cooking around the world, Chef Lora Kirk has returned home to Toronto. She is regarded as one of the highest-profile women chefs and is ready to share her talents as Chef of Ruby Watchco. Chef Kirk has a track record of success, and the culinary world will continue to expect wondrous dishes to come out of her kitchens. BIO: Lon Symensma was only 14 when he began working for a local diner when he found himself in love with the culinary world; the fast paced energy and demanding environment. Lon began competing in the national culinary circuit and when he was 19, joined Team USA at the 1996 Culinary Olympics in Berlin, Germany earning a silver medal. The next year, he was awarded the National Junior Chef Award.

This award boosted his confidence and he decided to pursue a career as a chef and enrolled in the Culinary Institute of America. After graduation, he traveled to France and spent time at two separate Michelin Starred restaurants, Roger Verge’s Moulin Mougin and Jacques Chibois’ La Bastide Saint Antonie. After France, Lon Symensma traveled to Italy and Spain, including San Sebastian’s famous Arzak.

In 2001, he joined Chef Jean-Georges Vongerichten at his restaurant in New York City, and developed a passion for the bold and energetic characteristics of Asian ingredients. With the guidance of Lon’s mentors, Jean-Georges and Gary Kunz, Lon spent 6 months traveling throughout South East Asia and China. While in Asia, Lon Symensma was allowed to partake in the opening of Jean-Gorges Shanghai and was given extensive training at the Royal Garden Hotel in Hong Kong and the five-star Datai resort in Malaysia.

Lon Symensa then returned back to the US as the opening sous chef at Spice Market, Jean-Georges’ South East Asian restaurant which earned a three star review from the New York Times. After Lon left Spice Market, he opened Yumcha, a Chinese restaurant in Manhattan’s West Village.

The launch of Yumcha and Lon’s long list of achievements caught the eye of Stephen Starr, who offered Lon Symensma a position as Chef de Cuisine at Buddakan. Since the opening in 2006, Lon has been responsible for the creative development of the menu. The next year, he became executive chef of the New York Times two star restaurant and his passion for cooking grew to its highest level, “I enjoy developing new dishes that represent the crisp, vibrant flavors of Asian cuisine. Many are my own twists on classical dishes created in an effort to provide guests with an experience that is both exciting and familiar.”

Lon Symensma is a frequent speaker on the Martha Stewart Radio program and has been seen on the CBS Early Show and New York 1. He is available for speaking engagements, hosting and cooking demonstrations.

BIO:  Lauren is an internationally known cooking and baking instructor, offering non-vocational (hands-on and demonstration) cooking and baking classes to men, women and teenagers. Classes are given in Lauren’s home-based cooking school and in various culinary facilities throughout the US. These classes also focus on cross-cultural cooking, teaching American cuisine to different nationalities and demographic groups, including male and female inmates on Rikers Island.

President and Founder of Hands-On-Food, Inc. a not-for-profit organization, devoted to helping people of different demographic groups to live a healthier, more fulfilling and more productive life. The underlying philosophy uses the wholesome art of cooking as the catalyst for positive change. One group H.O.F. has been dedicated to helping is the adolescent female inmates on Rikers Island, where 10 years ago, H.O.F built a teaching kitchen located in the high school facility within this correctional institution. For an entire decade, Lauren partnered with the Board of Education of New York and would guest teach monthly cooking classes and supply the tools and ingredients needed to enable the program, which provided two, back to back cooking classes each day, to happen. Though the building for the high school as recently changed and the program, which is now funded by the Board of Education, the program on Rikers, started by Lauren and H.O.F, is still going strong. This past February, Lauren created a new culinary/self-mastery program at The Brooklyn Residential Center, in Brooklyn, NY, a residence where female juvenile delinquents (age 13 to 18) have been remanded for 3 months to 1 year. After gathering many best-quality tools, cookware and appliances, she began teaching weekly cooking/baking classes and handed out her first certificates of completion to these students, in June 2010. In addition to creating and helping to subsidize the daily cooking program located in the prison, H.O.F. has provided preventative (educational) programs for young men and women recently released from Rikers, as well as programs for lower-income districts in and around the New York area. These programs focus on teaching parents and kid’s ways to use the kitchen as a place, and cooking as an easily accessible “at-home” activity, to foster a consistent source of physical fortification and emotional closeness within a family. She was the radio host of an hour long, “live” weekly talk-show “Food, Family & Home “Matters,” with Lauren Groveman.

BIO: Celebrity Chef Kevin Gillespie is a food enthusiastic in every sense of the word. He is passionate about serving his customers quality food each and every day, and is committed to using fresh, organic, sustainable ingredients in all of his dishes. He had quickly risen through the culinary ranks to become the executive chef and partner of Woodfire Grill in Atlanta, GA.

Kevin Gillespie, an Atlanta native, started his culinary education at the Art Institute of Atlanta. Here, he balanced a full course load with part-time duties at various restaurants. Upon graduating with honors, Gillespie held positions including chef de partie at Atlanta Grill at The Ritz-Carlton, sous chef at TWO Urban Licks and chef de cusine at Woodfire Grill. In 2006, Gillespie left Atlanta and headed to Portland, OR to work as executive sous chef at Fife Restaurant. However, after a year and a half, Gillespie missed the South too much and came back to work at Woodfire Grill.

In summer 2008, Nicolas Quinones and Bernard Moussa of Five Senes Restaurants, LLC purchased Woodfire Grill and made Kevin Gillespie the new executive chef. In early 2009, Gillespie joined the two men as a partner of the restaurant. Also, in 2009, Gillespie was chosen to participate on Bravo’s sixth season of Top Chef. On the show, Gillespie was voted as the “fan favorite,” made his mark by winning several “Quickfire” and “Elimination Challenges” and finished as one of the seasons top three finalists.

Gillespie is a rising star in the culinary world and has been named on of Mother Nature Network’s top (40 Chefs Under 40.” In his free time, he enjoys camping, playing music and barbecuing.
