BIO: Pastry chef and owner of Citizen Cake and co-owner of Orson, Elizabeth Falkner began her career as a chef at Café Claude. After Café Claude, she moved to Mesa with Chef Juilan Serrano. By 1994, Elizabeth was named head of the pastry division at Drew Nieporent’s Rubicon by Chef Traci Des Jardins.

Three years later, Elizabeth Falkner opened Citizen Cake in the South of Market district of San Francisco. In 2000, Elizabeth moved the restaurant to 399 Grove Street in Hayes Valley district. She has toured Japan and taught professional pastry courses and was a consultant on pasta for Barilla. BIO: Celebrity Chef Eli Kirshtein, a native of Atlanta, Gerogia, is one of the prominent, young chefs in the Atlanta culinary scene. Known for his appearance on Bravo’s hit TV show Top Chef, Kirshtein started his career in cooking at age 16, working under Chefs Kevin Rathbun and Richard Blais. Chef Kirshtein attended the prestigious Culinary Institute in Hyde Park, New York. While studying his craft, Kirshtein worked in high-profile kitchens including Le Bernardin, Alain Ducasse, Restaurant Daniel and Jean Georges. Throughout all of his studies and experiences, Chef Kirshtein has developed a philosophy of using the best ingredients and his own cooking technique. His favorite thing to cook is “anything with good friends and some heart put into it.”

Upon graduating from the Culinary Institute in Hyde Park, NY, Chef Eli Kirshtein returned to Atlanta to once again work with Richard Blais. This time, Kirshtein worked as Blais’ Sous Chef at One Midtown Kitchen. After two years, Chef Kirshtein left to work under Alberto Cabrera at Miami’s Karu & Y as Executive Sous Chef. More recently, in the fall of 2010, Kirshtein returned to Atlanta and is working on a new restaurant concept. He is appearing in demonstrations and workshops across the country. BIO: A graduate of Cornell University’s School of Hotel Administration, Douglas Keane began his career at The Four Seasons, a three-star restaurant in the Seagram’s Tower working under chef Christian “Hitsch” Albin. Following his time with Albin, he teamed with New York City’s Lespinasse with Chef Gray Kunz. While here Douglas was very impressed with the exotic flavor combinations and the precise technique in which the line cooks possessed. Next, Douglas Keane joined Chef Traci Des Jardins’ team in San Francisco at Jardiniere and later became chef de cuisine. After being granted  leave of absence, Douglas Keane served as opening sous chef at Gary Danko where his friendship with his future partner, Nick Peyton started. Douglas returned to Jardiniere as executive chef and in 2002, he was honored as the Rising Star Chef by the San Francisco Chronicle and earned three and a half stars for his cuisine.

Partnering with Nick Peyton, they opened Cyrus, a luxury restaurant opening in Sonoma County in 2005. Cyrus is Nick and Douglas’ “dream restaurant” specializing in ambitious cooking style that Douglas Keane refers to as “contemporary luxury.” The ingredients used in Cyrus are uncommon and are used to create exciting new tastes for guests.

Cyrus and Chef Douglas have been the recipient of an abundant amount of accolades which include two stars from The Michelin Guide, four stars from Michael Bauer at the San Francisco Chronicle, Gourmet magazine’s Top 50 Restaurants in America, Esquire magazine’s Chef of the Year and Food & Wine magazine’s Best New Chef. BIO: CJ Jacobson was formerly a professional volleyball but later developed a love and passion for food during some time spent in Europe. He has produced over 20 “how-to” videos on classic American cuisine, on Videojug.com and the videos have all been a hit.

BIO:  The only two Michelin stars in Brooklyn were awarded to Chef Cesar Ramirez and his restaurant, Chef’s Table at Brooklyn Fare Kitchen. Located in downtown Brooklyn is far from Cesar’s culinary path of Manhattan where he was once the Chef de Cuisine at Bouley.

Chef’s Table is not your normal restaurant; Brooklyn Fare Kitchen was just remodeled to accommodate 18 guests instead of 12 and is part of a grocery store in Brooklyn. Cesar Ramirez has kept the concept simple, you eat in the kitchen—Cesar’s work space and only gets the very best ingredients.  Jean-Luc Naret was quoted in GrubStreet New York as naming Ramirez’s Table as one of the best three meals he has had in the world this year.

Cesar Ramirez prefers to be called a craftsman and knows his food speaks for itself. Cesar didn’t start in New York, he made his was from Mexico and began his restaurant experience in Chicago where he worked at Tru. In Chicago he met David Bouley and eventually became chef at Danube, David’s restaurant.
