BIO: Beginning his culinary journey at 15 years old, with an apprenticeship at the Hyatt in Melbourne under Roger Leinhard, Shannon Bennett continued his career to Europe cooking with Albert Roux, John Burton and Marco Pierre White.

In 2000, Shannon opened Vue de monde in Carlton and soon after, opened the current location in Melbourne. His classic French cuisines with a modern Australian setting, is evident in his cooking. Vue de monde was awarded the Restaurant of the Year by the Australian Gourmet Traveler in 2006 and 2007. His next restaurant, Café Vue and Bistro Vue were both opened in 2006, and by 2009 Shannon Bennett opened his second location of Café Vue, and the third was opened right outside of Melbourne.

An established cookbook author, Shannon Bennett released his second edition of his first book, My Vue in 2007, My French Vue also in 2007 and Shannon Bennett’s Pairs in 2009. Shannon continues to evolve Vue de monde and renovate the restaurant into a more environmentally sustainable building. He plans to have it run off solar, wind power, and other eco-conscious innovations. BIO: Graduating from the Culinary Institute of America, and first in his class, Rick Moonen has a passion for sustainable fishing and seafood all of which has led to national acclaim. He apprenticed at L’Hostellerie Bressane in Hillsdale, New York and cooked beside Chef Jean Morel.

From L’Hostellerie Bressane, Rick held the position of saucier at Manhattan’s La Cote Basque and then two years at Le Cirque, working with the legendary Alain Salihac. In the coming years, Rick Moonen expanded his career through New York, becoming executive chef at many of New York’s finest most iconic restaurants; including Le Relais, Century Café, Chelsea Central, and Buzzy O’Keefe at The Water Club. After spending six years here, he left to become executive chef and partner at Oceana. While here, the restaurant gained three stars from The New York Times and gained national recognition. Next on his resume, Rick Moonen partnered to create Molyvos, a Greek restaurant that also earned three stars from The New York Times.

After five years, he finally decided to develop his own highly anticipated restaurant. As the executive chef and owner of New York City’s rm, he once again received three stars from The New York Times. In 2005, the growing city of Las Vegas caught Rick Moonen’s attention and he decided to close shop and move his technique to the west coast.

Rick Moonen’s rm seafood at Mandalay Bay Resort was opened in 2005 as a multi-leveled restaurant. The lower level offers the coastal favorites and a famous raw bar in a upbeat atmosphere. The second level offers diners a more elegant feel featuring Rick creative tasting and a la carte menus.

Rick can be seen all over the world speaking and teaching those on the dangers of over-fishing and ocean conservation. As the founding member of Seafood Choices Alliances, he was named “Seafood Champion” and is an active member of the Wildlife Conservation Society. He serves as the spokesperson for American caviar and is often quoted for his expertise with various indigenous and exotic fish. His first cookbook titled, Fish Without a Doubt, is a step by step guide on how to buy, prepare and cook a wide variety of fish. BIO: Nobuyuki Matsuhisa began is cooking career after graduating from high school at Matsue Sushi in Shinjuki, Tokyo. After working here for seven years, Nobuyuki was invited by a Peruvian entrepreneur to help him open a Japanese restaurant in Peru. At 24, he moved to Peru and opened a restaurant. Not realizing all of the ingredients he took for granted in Tokyo, he found himself improvising with techniques, he developed his unique style of cuisine incorporating Southern American ingredients and Japanese delicacies.

In 1977, Nobuyuki Matsuhisa moved to Los Angeles after living in Buenos Aires and Alaska, where he opened his own restaurant called Matsuhisa on La Cienega Blvd. in Beverly Hills. A frequent diner, Robert De Niro invited Nobuyuki to open a restaurant in Tribeca, New York. In 1993, Robert De Niro and Nobuyuki Matsuhisa opened NOBU to critical acclaim. Later, Nobuyuki opened NOBU’s in Milan, London, Greece, Dallas, Tokyo, Honolulu, Moscow, Dubai and Budapest. Nobuyuki is available for speaking engagements, endorsements and cooking demonstrations.

Since he began his culinary career at Le Cirque, where he worked with Chefs Alain Sailhac and Daniel Boulud, Chef Michael Lomonaco has been conjuring up bold and flavorful dishes using the highest quality ingredients. Lomonaco has spent time as head chef at The 21 Club, where he introduced a menu of bold flavors that redefined American cuisine. Next, he took a position as the executive chef of Windows on the World, a restaurant located on the 107th floor of the World Trade Centers. Critics and diners alike reveled in his dishes and Window’s quickly became on the country’s most beloved restaurants. The restaurant was destroyed in the September 11th attacks and many of its staff members were killed. BIO: Marc Murphy grew up living in many different locations around the world, all to which he contributes to his excellent learning of French and Italian cuisine. This experience helped grow his love and passion for the world of cooking.

Marc followed his brother to Peter Kump’s New York Cooking School (now the Institute of Culinary Education), and apprenticed in restaurants all over France and Italy. He returned to New York and became the line cook at Terrance Brennan’s Prix Fixe where he stayed for almost 2 years and worked his way through every position in the kitchen. Here, he formed a bond with sous chef Joseph Fortunato and David Pasternak.

With his passion on his sleeve, he returned to Europe with the Michelin Red Guide in his hand and began knocking on the doors of Paris’ most elite restaurants. Finally, he received a position at Le Miraville. After one year, Marc Murphy staged at the Louis XV in Monte Carlo, and caught the attention of executive chef Alain Ducasse. Alain was so impressed with his skills that he made arrangement for Marc Murphy to work with Sylvain Portay at Le Cirque upon returning to the U.S.

After Le Cirque, he began work as the sous chef at Layla, Drew Nieporent’s Middle Eastern fantasy in TriBeCa. When Joe Baum was opening Cellar in the Sky at Windows on the World, Joe recruited Marc to serve as executive chef where he received two stars from the New York Times.

In 2004, Marc Murphy went solo to open Landmarc [Tribeca], and won rave reviews for its French and Italian menu and the highly contemporary wine list. He is now the executive chef and owner of all the restaurants in The Anvil NY Group, which include3s Landmarc and Ditch Plains. He is a regular judge on The Food Network’s hit, CHOPPED and has appeared on Iron Chef America, Hot Chefs, The Martha Stewart Show, Make My Day and The Today Show. Marc Murphy is the Vice President of the Manhattan chapter of the New York State Restaurant Association, a member of City Harvest’s Food Council and on the Advisory Board of Culintro, Passport NYC and the Institute of Culinary Education.
